I am a big fan of fresh, made-from-scratch mashed potatoes. Now there have been occasions when I’ve bought a box of spud flakes to make with a meal because I just knew I wasn’t going to have time to make a batch from scratch. But hands-down, when I have the time, it’s fresh mashed potatoes for our family. The only part that is a bit of a pain is peeling the potatoes with a hand peeler or knife. It’s really the only part of the task that I really don’t enjoy. I guess I must have complained enough because my hubby recently bought me a great Peel Away Apple/Potato Peeler and I cannot believe how easy peeling potatoes has become. (more…)
